medium sweet potatoes (about 7 oz each)

Truffle EVOO*

Instructions
Cut potatoes into 1/8 inch slices
In a large bowl, combine seasonings and olive oil.
Add potatoes and coat well
Arrange on a baking sheet in a single layer
Bake uncovered at 400 for 20-25 minutes or until potatoes are golden brown and tender, turning several times for even roasting
Makes approximately 5 dozen chips
