Tortellini Soup
Ingredients
- 3 TBSP Colle Monacesco EVOO
- 1/2 cup Onions
- 1/2 cup celery
- 1 32 oz chicken broth
- 1 9 oz package refrigerated tortellini
- 1 15 oz can cannellini beans, rinsed and drained
- 1 15 oz can diced tomatoes, drained
- 1/2 TBSP dried basil
- 2 TBSP Aged Balsamic Vinegar
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Saute onions and celery in olive oil until clear
- Add chicken broth and bring to boil
- Add tortellini and cook for 8-9 minutes
- Add seasonings, beans, tomatoes and simmer for 5 minutes
- Serve topped with Parmesan cheese
