Ingredients
  

  • 3 TBSP Colle Monacesco EVOO
  • 1/2 cup Onions
  • 1/2 cup celery
  • 1 32 oz chicken broth
  • 1 9 oz package refrigerated tortellini
  • 1 15 oz can cannellini beans, rinsed and drained
  • 1 15 oz can diced tomatoes, drained
  • 1/2 TBSP dried basil
  • 2 TBSP Aged Balsamic Vinegar
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions
 

  • Saute onions and celery in olive oil until clear
  • Add chicken broth and bring to boil
  • Add tortellini and cook for 8-9 minutes
  • Add seasonings, beans, tomatoes and simmer for 5 minutes
  • Serve topped with Parmesan cheese
