Chopped Salad
Ingredients
- 2 oz Spinach
- 2 oz Kale
- 2 oz Baby Bok Choy
- 1 medium Pomegranate (½ Cup of seeds)
- ⅓ c Dried or Fresh Blueberries
- ⅓ c Dried Cranberries
- 1 c Red Grapes (Cut in Half)
- 2 tbsp Pumpkin Seeds
- 2-3 tbsp Aged Balsamic Vinegar
- 1-2 tbsp Orange EVOO
Instructions
- Chop greens finely
- Seed pomegranate
- Cut grapes in half
- Put greens in a bowl or on a platter
- Top with pomegranate seeds, blueberries, dried cranberries, grapes & pumpkin seeds
- Drizzle with Aged Balsamic & Orange EVOO
- Serve chilled
