Ingredients
  

  • 1/4 cup Aged White Balsamic Vinegar
  • 1/4 cup Fior Fiore EVOO
  • 1 tsp Paprika
  • 1/2 tsp Fresh Ground Pepper
  • 1/2 tsp Himalayan Sea Salt
  • 1 tsp Garlic Powder
  • 1 TBSP Acacia Honeyu
  • 1 pound Boneless and Skinless Chicken Breast
  • 1 cup Pineapple, finely chopped
  • 1/4 cup red pepper, finely chopped
  • 1/2 cup cherry tomatoes
  • 1/4 cup Onion, finely chopped
  • 1/2 tsp Fresh pepper
  • 1 TBSP Fior Fiore EVOO
  • 1/3 tsp Himalayan Sea Salt

Instructions
 

  • In bowl, whisk together Aged White Balsamic, Fior Fiore EVOO, paprika, pepper, salt, garlic powder and honey
  • Add chicken to marinade and allow to marinate for at least 30 minutes (overnight is best)
  • While chicken is marinating, prepare salsa – combine pineapple, pepper, tomatoes, onion, pepper, EVOO and salt
  • Cook chicken on high heat for 4-5 minutes on each side, turning frequently, until internal temperature reaches 160 degrees
  • Let chicken rest for 5 minutes before serving
  • Serve the chicken with salsa over salad or rice
