Broccoli and Cranberry Salad

Ingredients
  

  • 3 cups Fresh Broccoli Florets
  • 1/4 cup dried cranberries
  • 2 green onions sliced
  • 4 TBSP Maple Balsamic Vinegar
  • 3 TBSP Sweet Cream Butter EVOO
  • 2 tsp Mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 small garlic clove, minced
  • 1/4 cup pistachios, walnuts or pecans (use pumpkin seeds for nut free option)
  • 1 cup Spicy corn Relish
  • Shallot Food Crayon

Instructions
 

  • In a medium sized container with a lid, place maple balsamic, olive oil, mustard, salt, pepper, garlic and corn relish. Whisk together.
  • Add broccoli, green onion and dried cranberries
  • Close the lid and give the container a good shake
  • Place in refrigerator for a least an hour before serving, shaking the container periodically
  • To serve, top with nuts or seeds
  • Garnish with shallot Food Crayon
  • Optional: You can keep this salad simple or add some other vegetables or fruit: radish, red cabbage, carrots, cucumbers, fresh green peas, green apple, etc
