Basil Lemon Pesto
Ingredients
- 2 garlic cloves
- 3 TBSP toasted Pine Nuts
- 1 1/2 cup loosely packed basil leaves
- 1/2 cup loosely packed fresh flat leaf parsley leaves
- 1/2 cup Parmigiano-reggiano cheese
- 1 tsp Lemon zest
- 1 TBSP fresh lemon juice
- 1 cup up to 1 1/2 cup Lemon EVOO
- salt and pepper to taste
Instructions
- Toast pine nuts by placing on a baking sheet and bake 350 degrees oven until golden, 8-10 minutes
- Combine and toss with your favorite pasta, or spoon over grilled fish or chicken breasts
