Basil Lemon Pesto

Ingredients
  

  • 2 garlic cloves
  • 3 TBSP toasted Pine Nuts
  • 1 1/2 cup loosely packed basil leaves
  • 1/2 cup loosely packed fresh flat leaf parsley leaves
  • 1/2 cup Parmigiano-reggiano cheese
  • 1 tsp Lemon zest
  • 1 TBSP fresh lemon juice
  • 1 cup up to 1 1/2 cup Lemon EVOO
  • salt and pepper to taste

Instructions
 

  • Toast pine nuts by placing on a baking sheet and bake 350 degrees oven until golden, 8-10 minutes
  • Combine and toss with your favorite pasta, or spoon over grilled fish or chicken breasts
