Mozzarella and Tomato Skewers
Ingredients
- 12 slices baguette cut 1/2 inch slices
- 2 TBSP Tuscan Herb EVOO*
- 8 oz Mozzarella cheese,cut into 1/4 inch slices
- 3 ripe plum tomatoes, cut into 1/4 inch slices
- 1/2 cup Fresh basil leaves, plus extra for garnish
- 2 TBSP chopped fresh flat leaf parsley for garnish
- Aged Balsamic Vinegar* for drizzle
Instructions
- Preheat oven to 450
- Slice bread and arrange on a baking sheet
- Brush 1/2 the olive oil on bread and bake 3-5 minutes, until just golden brown. Remove from oven and set aside
- Make 16 stacks – start with bread, then slice of mozzarella, then a slice of tomato and then a basil leaf
- Sprinkle with salt and pepper, then repeat ending with a piece of bread
- Push a skewer through each stack and place on a baking sheet
- Drizzle kabobs with remaining oil and bake for 10-15 minutes until the cheese begins to melt
- Drizzle with Aged Balsamic and garnish with basil and parsley
