Mozzarella and Tomato Skewers

Ingredients
  

  • 12 slices baguette cut 1/2 inch slices
  • 2 TBSP Tuscan Herb EVOO*
  • 8 oz Mozzarella cheese,cut into 1/4 inch slices
  • 3 ripe plum tomatoes, cut into 1/4 inch slices
  • 1/2 cup Fresh basil leaves, plus extra for garnish
  • 2 TBSP chopped fresh flat leaf parsley for garnish
  • Aged Balsamic Vinegar* for drizzle

Instructions
 

  • Preheat oven to 450
  • Slice bread and arrange on a baking sheet
  • Brush 1/2 the olive oil on bread and bake 3-5 minutes, until just golden brown. Remove from oven and set aside
  • Make 16 stacks – start with bread, then slice of mozzarella, then a slice of tomato and then a basil leaf
  • Sprinkle with salt and pepper, then repeat ending with a piece of bread
  • Push a skewer through each stack and place on a baking sheet
  • Drizzle kabobs with remaining oil and bake for 10-15 minutes until the cheese begins to melt
  • Drizzle with Aged Balsamic and garnish with basil and parsley
